Coconut flour pancakes

Sugar and white flour can be very dangerous for our health. Consumed together (usually in pastries) can cause obesity and bad disease like cancer and diabetes.

We all love deserts but we should try to find a healthy way to eat them and avoid as much as we can sugar.

Coconut flour is low in carbs, high fiber and gluten free. It’s even good for people who suffer from diabetes because it moderates the blood sugar.

Coconut oil has a great combination of fatty acids which can help for fat loss because it increase our energy.

Here is a recipe for coconut flour pancakes that I often make:

3 eggs
Pinch of salt
1/2 cup coconut flour
1 teaspoon baking soda
1/3 coconut water
3 tablespoon coconut oil
Maple syrup
Apricots or blueberries or whatever fruit you like to eat them with
2 tablespoon honey
1 vanilla bean

Mix the eggs with the coconut water, coconut oil, vanilla bean and the two tbs of honey.
Add slowly the coconut flour, baking soda and the salt and mix them together.
Heat the pan and grease it with coconut oil.
Add 1/4 cup of the mix in the pan on medium heat.

Check the underside to make sure they are cooked, before flipping.

Serve them with maple syrup and any kind of fruit you like.
